  • 1 small yellow onion, finely diced
  • 1 medium carrot, finely diced
  • 1 celery stalk, finely diced
  • 2 cloves garlic, minced
  • 6 cups chicken broth or chicken stock
  • 1 cup pastina pasta
  • 1 Parmesan rind, optional
  • ½ cup freshly grated Parmesan cheese, plus more for serving
  • ½ teaspoon salt, or to taste
  • ¼ teaspoon freshly ground black pepper
  • 1 tablespoon fresh parsley, finely chopped
  • 1 teaspoon fresh lemon juice, optional

Instructions

  1. Sauté the vegetables: Heat the olive oil or butter in a large saucepan over medium heat. Add the diced onion, carrot, and celery. Cook for 4–5 minutes, stirring occasionally, until the vegetables begin to soften.
  2. Add the garlic: Stir in the minced garlic and cook for about 30 seconds, just until fragrant.
  3. Add the broth: Pour in the chicken broth and add the Parmesan rind, if using. Bring the soup to a gentle boil.
  4. Simmer the vegetables: Reduce the heat and simmer for 5–7 minutes, or until the vegetables are tender.
  5. Cook the pastina: Stir in the pastina and cook according to the package directions, usually about 5–7 minutes. Stir occasionally to prevent the tiny pasta from sticking to the bottom of the pot.
  6. Add the Parmesan: Remove the Parmesan rind. Reduce the heat and stir in the freshly grated Parmesan until melted and incorporated.
  7. Season the soup: Taste and add salt and black pepper as needed. Stir in the fresh parsley and optional lemon juice for a bright finish.
  8. Serve immediately: Ladle the Pastina Soup into bowls and top with additional grated Parmesan, freshly ground black pepper, and parsley. Serve while hot.
