- 200 g unsalted butter, softened
- 180–200 g brown sugar
- 50 g black treacle
- 3 eggs
- 250–300 g apples, peeled, cored and chopped
- 225 g self-raising flour
- 1 teaspoon baking powder or bicarbonate of soda as appropriate
- 1 teaspoon ground cinnamon
- 1 teaspoon ground ginger
- 1 teaspoon mixed spice
- Pinch of salt
- 1 teaspoon vanilla extract, optional
For the Sticky Treacle Glaze
- 2 tablespoons black treacle
- 25 g butter
- 2 tablespoons brown sugar
- 2–3 tablespoons cream or milk
Instructions
- Preheat the oven to 180°C / 350°F and grease and line a standard loaf tin.
- Peel, core and chop the apples into small, even pieces.
- Beat the softened butter and brown sugar until creamy.
- Add the black treacle and mix until combined.
- Add the eggs one at a time, mixing between additions.
- Combine the flour, raising agent, cinnamon, ginger, mixed spice and salt in a separate bowl.
- Gradually add the dry ingredients to the wet mixture.
- Mix gently until just combined.
- Fold the chopped apples through the batter.
- Transfer the batter to the prepared loaf tin.
- Smooth the surface and create a shallow line down the center if you want a neat loaf crack.
- Bake until risen, firm and cooked through the center.
- Allow the loaf to cool in the tin briefly.
- Transfer it to a wire rack and cool.
- Make the sticky glaze by gently warming the treacle, butter, brown sugar and cream or milk together.
- Stir until smooth and glossy.
- Allow the glaze to cool slightly.
- Drizzle it generously over the cooled loaf.
- Slice and serve.
