Description
Pampushky are traditional Ukrainian garlic bread rolls—pillowy soft, slightly sweet, and brushed with a fragrant garlic oil.

For the Dough
- 3 ½ cups all-purpose flour (plus extra for dusting)
- 2 ¼ teaspoons active dry yeast (or 7g packet)
- 1 cup warm milk (or water, slightly warm—not hot)
- 2 tablespoons sugar
- 1 teaspoon salt
- 1 large egg
- 3 tablespoons unsalted butter (melted) or vegetable oil
For the Garlic Topping
- 4–6 cloves garlic (finely minced or crushed)
- 3 tablespoons sunflower oil (or any neutral oil)
- 2 tablespoons fresh dill (chopped)
- 1 tablespoon fresh parsley (optional)
- Pinch of salt
Instructions
1. Preparing the Dough
- Activate yeast in warm liquid with a bit of sugar
- Let it sit until foamy
- Combine with flour, eggs, butter, and salt
- Knead until smooth and elastic
2. First Rise
- Place dough in a greased bowl
- Cover and let it rise until doubled in size
- This usually takes 1–2 hours
3. Shaping the Buns
- Divide dough into small equal portions
- Roll into balls
- Place them close together in a baking dish
4. Second Rise
- Let the shaped buns rest again
- They should become puffy and soft
5. Baking
- Bake in a preheated oven (around 180°C / 350°F)
- Bake until golden brown on top
6. Making Garlic Oil
- Mix minced garlic with oil and herbs
- Stir well to release flavors
7. Final Touch
- Brush garlic oil over hot buns immediately after baking
- Allow it to soak in for maximum flavor
